Chanterelle sauce with Parmesan

Ingredients for 2 servings:

  • 2 handfuls of chanterelles
  • 1 shallot(s)
  • 1 small garlic clove(s)
  • 1 cup of cream
  • e.g. Parmesan, freshly grated
  • 1 shot of white wine
  • some flour
  • some butter
  • salt and pepper
  • possibly nutmeg or herbs

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

vegetarian

Finely chop the shallot, crush the garlic with a press, and sauté both in a little butter. Add the chanterelles and fry well. Add a little flour and, after a short time, deglaze with white wine. Add the cup of cream and let it simmer. Finally, stir in the freshly grated Parmesan cheese and season with salt and pepper. If you like, add a little nutmeg or herbs.
