- 5 tomatoes

- 1 garlic clove(s)

Nepalese
Peel the onion, halve it, and slice it into thin rings. Wash the desired amount of chili, halve it, and slice it into rings (in Nepal, they don’t deseed it, which makes it considerably hotter, so be careful!). Peel the garlic and finely slice it. Peel the 2-3 cm piece of ginger and either chop it into small pieces or slice it thinly. Clean and slice the mushrooms. Wash and slice the tomatoes. Heat oil in a pan, fry the chili and ginger. Add the onion and garlic, and fry until golden brown. Now add the mushrooms, season with salt, add the turmeric, and fry until the mushroom juices have almost evaporated. Add the tomato pieces and continue to simmer until the sauce becomes thick. Add a little cumin and a tiny bit of water and bring back to a boil. Season with salt. It’s a very simple dish served with rice. It is quick and easy to prepare, especially if you have few ingredients at home.
