One Pot Pasta with Salmon, Spinach and Feta

Ingredients for 4 servings:

  • 300 g salmon fillet(s), fresh or frozen
  • 200 g feta cheese
  • 1 pack of spinach (spiced spinach), approx. 500 g
  • 1 pack of pasta, from the fresh produce section
  • 400 ml cream
  • 2 tsp vegetable stock powder
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cut the fresh salmon into small cubes. If using frozen salmon, let it thaw slightly and then cut it into small cubes. Set the fish aside. Thaw the spinach in a large pot over medium heat according to the package instructions. If using frozen salmon, add it now. If using fresh salmon, do not add it until the spinach is completely thawed. Add the cream, lightly shredded feta, and vegetable stock powder to the salmon and spinach mixture in the pot and heat over low heat until the feta has melted. Now add the pasta; this usually takes about 2 minutes depending on the brand, and fold in carefully. Continue to cook everything slowly with the lid closed until the pasta is tender. Add a little more cream if desired. Season to taste with salt and pepper. A quick and easy, yet very delicious and filling dish for every day.
