Ingredients for 4 servings:
- 125 g sugar, fine
- 3 eggs, separated
- 60 g butter, soft
- 250 ml milk
- 2 tbsp instant coffee powder
- 250 g flour
- 2 tbsp cocoa powder
- 2 tsp baking powder
- 1 pinch of salt
- 125 ml coffee, strong (espresso)
- 175 g sugar, fine
- 50 ml cream
- whipped cream
- Chocolate shavings
- Cocoa powder or
- fruit
Instructions

For the espresso syrup, bring 175g of sugar, espresso, cream, and 2-3 tablespoons of water to a boil in a small saucepan, stirring constantly (you can adjust the amount of sugar slightly to taste). Then reduce the heat and simmer the syrup for about 5 minutes, stirring occasionally. Set aside. For the waffles, beat the egg whites with a pinch of salt until stiff peaks form. Combine the egg yolks with 125g of sugar, milk, coffee powder, and softened butter. Mix the flour with the cocoa powder and baking powder and sift it over the liquid batter. Mix everything well to avoid lumps, then carefully fold in the beaten egg whites. Next, grease a preheated waffle iron and fill it with batter depending on the size of the iron (the number of waffles will vary accordingly). Serve the waffles individually with a little espresso syrup and garnish with a dollop of freshly whipped cream, chocolate chips, and/or cocoa powder, or fresh fruit, if desired.
