Oven-baked potato and sweet potato mash

Ingredients for 4 servings:

  • 7 m.-sized potatoes
  • 1 large sweet potato(s)
  • 80 g sweet cream butter or herb butter
  • 1 tsp, leveled salt
  • nutmeg
  • Pepper, white
  • some oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Preheat the oven to 200°C fan/convection oven. Wash the potatoes and sweet potato and place them on a baking sheet in the preheated oven. Bake the potatoes for 1 hour. Test for doneness with a fork; the potatoes should feel very soft. Shortly before the end of cooking, heat the oil in a pan. The skins of the potatoes will turn reddish-brown and puff up slightly. Remove the potatoes and sweet potato from the oven and cut them open. Let the potatoes cool briefly and remove the skins from all the potatoes. Using a fork or masher, mash the potatoes, add the salt and butter. If you prefer a butterier texture, add more butter. More butter will make the consistency creamier. Add a little pepper and nutmeg and season to taste. Cut the potato skins into strips and fry in oil until crispy. Garnish the fried skins with the mash and serve immediately.
