Oven-baked vegetables with garlic

Ingredients for 4 servings:

  • 1.2 kg new potatoes
  • 4 tbsp olive oil
  • salt and pepper
  • 2 bell peppers, colored
  • 1 zucchini
  • 1 eggplant(s)
  • 4 garlic cloves
  • 4 rosemary sprigs

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 15 minutes

Preheat the oven to 200°C (top/bottom heat). Wash the potatoes, quarter them lengthwise, and place them in a baking dish. Drizzle with olive oil and season with salt. Cook in the hot oven for about 30 minutes, turning halfway through. Wash and trim the vegetables, then cut them into bite-sized pieces. Peel and grate the garlic. Add everything to the potatoes, season with salt and pepper. Place the rosemary on top and cook for another 20-25 minutes. Serve with some white bread and grilled meat.
