Ingredients for 4 servings:

  • 250 g tomatoes
  • 250 g zucchini
  • 250 g potatoes
  • 1 onion(s), red
  • 1 tbsp oregano (fresh)
  • Olive oil, cold-pressed
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the tomatoes and zucchini into 1/2 cm thick slices. Peel the potatoes and slice them thinly. Slice the onion. Arrange the vegetables in a shallow, oiled baking dish, alternating them like roof tiles. Season with salt and plenty of pepper. Sprinkle with oregano and drizzle generously with olive oil. Bake at 180°C for 50-60 minutes. Baste the dish with the juices several times during baking, taking care to avoid damaging the arrangement. If the gratin gets too brown, cover with foil.
