Pancakes with spinach

Ingredients for 4 servings:

  • 400 g flour
  • ½ cup(s) sugar
  • 6 eggs
  • ½ liter of milk
  • salt and pepper
  • 1 dashes mineral water
  • 150 g cheese (Gouda), grated
  • 1 pack of frozen spinach
  • garlic powder

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Combine flour, sugar, eggs, milk, a pinch of salt, and a splash of sparkling water in a large mixing bowl and whisk until creamy. Then, cook the individual pancakes (careful not to overcook them). Cook the spinach in a small saucepan and season with pepper and garlic powder. Then, spread the spinach over each pancake and roll them up. Place the rolled pancakes close together in a baking dish and top with grated cheese. Place in the oven at 180°C and bake until the cheese is golden brown (about 20 minutes).
