Ingredients for 2 servings:
- 250 g spaghetti, fork spaghetti or linguine
- 3 onions
- 2 bell peppers, green
- 4 eggs
- ½ bunch chives
- 4 tbsp vegetable oil
- Salt and pepper, white from the mill

Break the spaghetti into three pieces, cook until al dente, place in a sieve, rinse under cold water, return to the pot and keep warm. Peel the onion and cut into eighths. Dice the bell peppers. Beat the eggs with salt and pepper. Wash the chives and cut into rings. Heat a non-stick pan. Add the oil. Fry the onion until translucent. Add the diced bell peppers and the pasta and continue to fry everything over medium heat for about 10 minutes. Season with salt and pepper. Pour the egg mixture over the pasta and let it set, stirring occasionally. Divide the cooked pasta between plates and sprinkle with chive rings.
