Potato pancake roll

Ingredients for 4 servings:

  • 4 m.-sized potatoes
  • 3 carrots
  • 2 shallots, diced
  • 30 g chives, chopped
  • 3 eggs
  • 1 pinch of nutmeg
  • 1 tsp salt
  • 1 tsp pepper
  • 400 g herb cream cheese
  • 6 slice(s) cooked ham, large
  • 100 g cheese, grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Peel the potatoes and carrots and grate them. Add the chives, shallots, eggs, nutmeg, salt, and pepper and mix thoroughly. Place the mixture on a baking sheet lined with baking paper, ensuring there are no cracks or holes. Bake at 160°C (fan oven) for 30 minutes and let cool. Spread half of the herb cream cheese on the potato pancake. Top with the cooked ham and spread with the remaining cream cheese. Roll the pancake tightly lengthwise. Sprinkle the roll with the cheese and bake for 15 minutes at 160°C (fan oven). To serve, cut the roll into thick slices. Delicious hot or cold.
