Ingredients for 4 servings:

  • 3 m.-sized jacket potatoes
  • 1 onion(s)
  • 1 bell pepper(s), red
  • 5 eggs
  • 3 slices of bacon
  • 1 jalapeño(s)
  • 1 cup vegetable broth

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Cut the bacon into strips and fry with the finely diced onion. Add the sliced ​​bell pepper and fry. Finely chop the jalapeño pepper and stir in. Peel the potatoes, slice them, and place them on top of the vegetables. Whisk the vegetable broth with the eggs and pour over the top. Let the pan stand on the stovetop for 3-4 minutes, then place it in the oven at 180°C (top/bottom heat) for about 20-25 minutes, until the eggs are set. I serve the tortilla with homemade herb yogurt.
