Pizza potatoes from the oven

Ingredients for 4 servings:

  • 8 m.-sized potatoes, firm or mostly firm cooking
  • 1 can of pizza tomatoes
  • e.g. salt and pepper
  • 1 tsp pizza seasoning
  • 150g mozzarella
  • 6 olives, black or green
  • 80 g ham or salami
  • 80 g cheese, grated
  • 1 sprig(s) rosemary

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Simply brush the potatoes and then cook them unpeeled for about 15 minutes until soft, then drain and let cool slightly. In the meantime, add the pizza tomatoes to a pan, season generously with pepper, salt, and a heaped teaspoon of pizza seasoning. Stir everything together and simmer on medium heat for about 10 minutes until a thick mixture has formed. Slice the mozzarella and olives. Halve the potatoes lengthwise with a sharp knife and place them cut-side up on a baking sheet lined with baking paper. Optionally, sprinkle with a little salt. Spread a generous amount of the tomato mixture over the cut surfaces. Place the mozzarella slices on top, then scatter the ham cubes and sliced ​​olives. Finally, sprinkle everything with grated cheese. For additional flavor, add the rosemary sprig to the baking sheet. Bake the potatoes at 200°C (fan oven 180°C) for 12-15 minutes. Sprinkle some freshly ground pepper on the baked potatoes and then serve.
