Minced meat and feta pot

Ingredients for 2 servings:

  • 250 g minced meat
  • 1 onion(s)
  • 200 g feta cheese
  • 1 large bell pepper(s), red
  • 1 small can of corn
  • some gherkins
  • 125 ml tomato juice
  • some olive oil
  • salt and pepper
  • possibly chili flakes

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Dice the onion, bell pepper, gherkins, and feta cheese. Sauté the onion cubes in a little olive oil until translucent, then add the ground beef and cook thoroughly. Reduce the heat and add the tomato juice. Add the bell pepper, corn, and gherkins and let everything simmer gently. Finally, add the feta cubes and seasonings and let it simmer for another 5 minutes. Serve with bread or baguette if desired. We love its rather mushy consistency and like to eat it on its own for dinner. The cheese is definitely filling and even low-carb. It can, of course, be varied in countless ways with other vegetables or cheese. If you add a little more liquid, you can also use it as a sauce for pasta, rice, or similar dishes. So, the sky’s the limit.
