Ingredients for 4 servings:
- 2 tbsp olive oil
- 1 onion(s)
- 1 clove(s) garlic
- 1 large pepper or chili pepper
- 2 mangoes
- 250 g mushrooms
- 4 carrots
- 2 small sweet potatoes
- 200 ml milk
- 250 g brown rice
- curry powder
- Cayenne pepper
- Salt
- Caraway seeds
- Paprika powder

Cut the onion, peppers, carrots, peeled sweet potatoes, and mushrooms into bite-sized pieces. Peel and dice the mangoes. Heat the oil in a pan and sauté the onions and peppers. Crush the garlic and add it. Add the carrots and sweet potatoes and sauté for 10 minutes. Add the mushrooms and deglaze with vegetable stock, then simmer for 15-20 minutes. Meanwhile, blend half of the mango cubes with the milk and then add them. Add the spices. At the end of the cooking time, add the remaining mango pieces and let them warm briefly. Meanwhile, cook the rice in lightly salted water according to the package instructions. Serve the curry with the rice.
