Quince pancake

Ingredients for 1 servings:

  • 2 quinces, small, peeled and cut into small pieces
  • 2 tsp lemon juice
  • 5 tbsp water
  • 6 tbsp sugar
  • 2 eggs
  • 30 g flour
  • 60 ml milk
  • 2 tbsp oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Quince omelet

Heat the quince pieces with 3 tablespoons of sugar, lemon juice, and the water in a covered pan for 5 minutes, until slightly softened. Separate the eggs and beat the egg whites until stiff peaks form. Combine the flour and milk with the egg yolks, then gently fold in the egg whites. Stir the quinces into the mixture. Heat the oil in the pan and use the batter to make either omelets or pancakes. Sprinkle with the remaining sugar.
