Tipsy apple pancakes à la Didi

Ingredients for 8 servings:

  • 4 m.-sized apples
  • 1 kg wheat flour (type 405)
  • 8 m.-sized eggs
  • 1 bag of baking powder
  • ¾ liter sweet cider
  • 8 cl Calvados
  • 200 g sugar
  • 1 pinch of salt
  • Sugar for sprinkling
  • Fat for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Peel, core, and cut the apples into small pieces. Sift the flour and baking powder together. Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. Beat the egg yolks and sugar until frothy. Add the flour and baking powder mixture and gradually stir in the cider. Now add the Calvados. Carefully fold in the egg whites and add the apple pieces. In a small frying pan with a little oil, fry small pancakes in batches until golden brown on both sides. Keep warm, sprinkled with sugar and serve.
