Vegetable rice with feta

Ingredients for 2 servings:

  • 1 large onion(s)
  • 2 small zucchini
  • 2 bell peppers
  • 100 g feta cheese
  • 2 garlic cloves
  • 1 bag of rice
  • 1 can of tomatoes, chopped
  • Pinch(s) of salt and pepper
  • Pinch(s) of paprika powder, hot
  • Pinch(s) of oregano
  • 2 tbsp olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Dice the onion and garlic and sauté in olive oil. Dice the zucchini and bell pepper, add them, and sauté for 15 minutes. Cook the rice in salted water until tender. Crumble the feta and add it to the vegetables along with the tomatoes. Simmer for 4 minutes until the feta has melted. Season with salt, pepper, paprika, and oregano. Serve the rice on plates and garnish with the sauce.
