Spicy Chinese cabbage

Ingredients for 2 servings:

  • 500 g Chinese cabbage
  • 1 large onion(s), red
  • 3 garlic cloves
  • 1 pepper, red
  • 180 g soy mince
  • 150 ml vegetable stock
  • 2 tbsp, heaped tomato ketchup
  • 2 tbsp soy sauce
  • 1 tbsp teriyaki sauce
  • 3 tbsp peanut oil

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Cut the Chinese cabbage into 2 cm wide strips. Cut the peppers into thin rings and the garlic into thin slices. Cut the onion into rings and then halve them. Heat a wok and heat the oil until hot. Sauté the onions while stirring. Add the peppers and garlic and fry for 3 minutes. Pour in a little vegetable stock. Add the Chinese cabbage and fry for 3 minutes. Stir in the veggie mince and the rest of the stock. Add the ketchup, soy sauce, and teriyaki sauce and bring to a boil briefly. Reduce the heat and simmer for 4 minutes while stirring. Serve with rice.
