Fruit cake for a surprise visit

Cream the butter and sugar until fluffy. Gradually add the vanilla sugar and eggs, one at a time while stirring. Stir in the lemon flavoring. Mix the flour and baking powder and stir in alternately with the milk. Pour the batter into greased jars, about half full. Preheat the oven to 150 degrees Celsius (convection oven) and bake the cake for 30-35 minutes. Test with a wooden skewer to see if the cake is cooked. Remove the jars from the oven using a thick cloth and immediately cover with the lids. This batter is enough for 4 jars (440 ml each). Remove the cakes from the jars, cut into 4 slices, and wrap a wide strip of aluminum foil around each slice to prevent the glaze from running down. Top the tarts with your choice of fruit and then pour the cooked glaze over the top.
