Ingredients for 2 servings:

  • 200 g crocodile steak(s)
  • 100 ml beer, light
  • 1 egg(s)
  • salt and pepper
  • g Flour
  • 1 bunch of dill
  • Honey
  • Mustard
  • Soy sauce, dark
  • Fat, for frying

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Fried Alligator Tail

Unbelievable but true, we ate this dish at a friend’s house in Key West and all I can say is, it’s worth trying if you can get your hands on the ingredients… Make a not-too-stiff batter from the beer, flour, egg, salt, and pepper, and let it swell a bit. Mix the honey, mustard, and soy to make a sauce, roughly using a ratio of 3 parts honey, 1 part mustard, and 2 parts soy. It’s a matter of taste and also depends on the saltiness of the soy sauce, so test it out a bit. Finely chop the dill and stir it in. Wash the crocodile steak and, if necessary, de-sinews it. Cut into thin strips, season with salt and pepper, and dip them into the bowl with the beer batter. Fill a large pot with about 5cm of frying oil or get the deep fryer ready. The strips take a little longer to cook than chicken; I’d estimate 5-8 minutes. When they’re golden and crispy on the outside, drain on kitchen paper and serve with the honey, mustard, and soy dip. Tastes somewhere between chicken and fish.
