Apple Speculoos Tiramisu

Ingredients for 4 servings:

  • 15 spiced speculatius cookies
  • 2 apples
  • 100 ml apple juice
  • 200 g applesauce
  • 250 g low-fat curd cheese
  • 200 g yogurt
  • 1 packet of vanilla sugar
  • 2 tsp sugar
  • n. B. Cinnamon powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Peel and dice the apples, bring to a boil with the sugar, cinnamon, and apple juice. Simmer over medium heat for about 10 minutes, until the apples are soft and the apple juice has thickened. Remove from the heat, stir in the applesauce, and season with cinnamon if desired. Soak the spiced speculatius biscuits (except for about 3 pieces for the topping) in the apple juice. Line a dish with the soaked speculatius biscuits and pour the apple mixture over them. In a bowl, mix the quark, yogurt, and vanilla sugar; season with cinnamon to taste. Layer over the apple mixture. Let it sit in the refrigerator. To serve, crumble the remaining speculatius biscuits on top for a crunch.
