quick method to preserve apples, delicious compote
Quarter, peel, core, and slice the apples. Place in jars. Thinly peel and squeeze the lemons. Make a syrup from sugar, water, wine, cinnamon, lemon zest and juice, and salt. Let cool with all ingredients. Strain the apples through a sieve and fill the jars, then top up with the syrup. The cinnamon sticks can also be used to make cinnamon liqueur (wash and dry them first). Boil in a pressure cooker at 90°C for 30 minutes.
