Jackfruit flesh for burgers, wraps and kebabs

Ingredients for 3 servings:

  • 1 can fruit (green jackfruit), not in syrup
  • 1 tsp brown sugar
  • ½ tsp paprika powder, smoked or plain paprika powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp chili
  • 1 pinch(s) cayenne pepper, optional
  • 1 dash of olive oil for frying
  • ½ cup BBQ sauce, smoky, alternatively less liquid smoke

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Jackfruit as a substitute for fibrous meat

Pour the spice mix into a bowl. Add the drained jackfruit pieces to the bowl and mix everything well. Now place the pieces in a pan heated with olive oil, flat-side down if possible. The temperature should be medium; this depends largely on the pan. Now add the BBQ sauce and fry everything for about 5-10 minutes. After a while, the pieces will look like seared meat on the bottom. Now it’s time to turn the pieces over and fry that side again. You can already see that the pieces are slowly falling apart, or rather, the fibers are already coming off when you move them around in the pan. Now pull the pieces apart with two forks to create “meat fibers.” The consistency is somewhere between pork and chicken. Now place these pieces on a burger bun and top with vegetables, mustard, ketchup, hot sauce, etc. as desired. Tip: I’ve also put this in a wrap. Doner kebab would also be a variation.
