Ingredients for 4 servings:
- 250 g pasta
- 500 g sausage, minced meat or chicken
- 800 g vegetables, e.g. bell pepper(s), zucchini, peas, carrots
- 1 tbsp oil
- 2 tbsp tomato paste
- 500 g tomatoes, chopped
- 100 ml vegetable stock
- Salt
- pepper
- 3 tbsp herbs, e.g. basil, oregano, rosemary or a herb mixture
- some chili powder
- some paprika powder
- 1 pinch(s) of sugar
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Dice the vegetables and cut the sausage or meat into bite-sized pieces. Heat the oil in a large pan. Brown the sausage/meat until well browned, add tomato paste and brown. Add the vegetables and fry over medium heat until sautéed. Carrots or peppers need a little longer than zucchini; frozen peas can be added later while simmering. Season with salt, pepper, paprika and chili, add the herbs and sugar and let it simmer briefly. Deglaze with vegetable stock and add the chopped tomatoes. Simmer for about 10-15 minutes, until the pasta reaches the desired consistency. Meanwhile, cook the pasta in salted water according to the package instructions. Drain the pasta and add it to the rest of the pan. Season again to taste, then serve.
