Black pudding towers with mashed potatoes and caramelized apples

Ingredients for 4 servings:

  • 4 m.-sized potatoes
  • 2 tbsp crème fraîche
  • 140 g butter
  • 4 apples
  • 2 tbsp powdered sugar
  • 1 m.-sized onion(s)
  • 600 g black pudding
  • 1 tbsp oil
  • e.g. salt and pepper

Working time approx. 35 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 20 minutes

Heaven and Earth by Pannepot

Peel the potatoes and cut into pieces. Boil in salted water, drain, and mash finely. Whisk in the crème fraîche and 100g butter; set aside. Peel the apples and cut into small cubes. Melt the remaining 40g butter in a pan and add the diced apples. Fry for 5 minutes, stirring occasionally. Dust with sugar, add a pinch of salt, and add 5cl water. Allow the water to evaporate, then caramelize the apples over low heat, stirring frequently. Set aside. Chop the onion freshly, remove the black pudding from its casing, and cut into pieces. Heat the oil in a pan and first sauté the onion until soft. Add the black pudding and fry for 5 minutes, stirring occasionally. Place 4 rings, 10cm in diameter and approximately 8cm thick, on a baking tray. First, arrange the black pudding in the rings, then half of the apples, the mashed potatoes, and finally the caramelized apples. Bake for 15 minutes in an oven preheated to 180°C. Place on plates and peel off the rings.
