Black pudding on a cabbage base with potato chips

Ingredients for 4 servings:

  • 400 g black pudding, sliced
  • Flour, eggs and breadcrumbs
  • 300 g white cabbage
  • 2 shallots
  • 4 slice(s) bacon, streaky
  • Lard, for frying
  • some soup
  • 1 shot of vinegar (sherry vinegar)
  • salt and pepper
  • Fat, for frying
  • Chips (potato chips)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Blunzen variation

Coat the black pudding like a schnitzel in flour, egg, and breadcrumbs and fry in hot fat. Sauté the diced shallots and briefly roast the finely chopped cabbage. Pour in some broth, season with salt and pepper, cook until tender, and season with a dash of sherry vinegar. Dice the bacon, fry until crispy, and add it to the cabbage. Garnish with potato chips.
