Beetroot Rösti à la Gabi

Ingredients for 4 servings:

  • 600 g beetroot, peeled, grated
  • 400 g potatoes, floury, peeled, grated
  • 1 medium-sized onion(s), chopped
  • 3 tbsp Flour, instant
  • Salt
  • Black pepper, freshly ground
  • 4 tbsp rapeseed oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Mix together the beets, potatoes, onions, and flour and season generously with salt and pepper. Form into 8 equal-sized rösti and fry in hot rapeseed oil, turning occasionally. Serve with smoked salmon and horseradish or wasabi cream.
