Ingredients for 4 servings:
- 1 small head of red cabbage, approx. 1 kg, cleaned and finely sliced
- 1 shallot(s), finely diced
- 1 tbsp butter
- 100 ml vegetable stock
- 50 ml apple cider vinegar
- 50 ml elderflower syrup
- 1 apple, peeled and grated
- ½ tsp clove powder
- ½ tsp cinnamon powder
- 1 bay leaf
- 1 pinch(s) cardamom powder
- salt and pepper
- possibly cornstarch, mixed with a little water
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes
In a saucepan, sauté the diced shallots in butter until translucent. Add the red cabbage and top up with stock and vinegar. Bring to a boil. Add the spices and elderflower syrup, cover, and simmer over medium heat until tender. Add the grated apple 10 minutes before the end of the cooking time. If desired, thicken slightly and season to taste with salt, pepper, vinegar, and elderflower syrup.
