Potato and chard mash

Ingredients for 2 servings:

  • 3 potatoes
  • 1 tbsp vegetable stock powder
  • 5 stalks of chard
  • 1 tbsp olive oil
  • 1 tbsp butter

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Peel, wash, and slice the potatoes. Place them in a saucepan with the vegetable stock powder. Add enough water to cover the slices no more than halfway. Cook the potatoes until soft. Meanwhile, wash the chard, remove the stems, and slice the leaves. Heat the olive oil in a pan, add the chard, and sauté until wilted. Using a hand mixer, mix the soft potatoes, including the cooking water, until smooth. Stir in the butter. Then fold in the chard.
