Ingredients for 2 servings:
- 8 monkfish cheeks, approx. 400 g
- 4 tbsp spice mix (shrimp-pepper seasoning)
Instructions
Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 22 minutes; Total time approx. 1 hour 32 minutes
Sous vide
Toss the monkfish cheeks in the spice mix. Vacuum-seal the cheeks in foil and marinate for 1 hour at room temperature. Preheat a sous vide cooker to 60°C. Place the cheeks in the water bath and heat for about 22 minutes. Remove from the bag and serve immediately.
