Red wine and chervil butter

Ingredients for 4 servings:

  • 250 g butter
  • 250 ml red wine
  • 3 shallots
  • 1 tsp lemon juice
  • some salt and pepper
  • 1 bunch of chervil

Instructions

Working time approx. 10 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

perfect with steaks

Soften the butter. Finely chop the shallots and chervil. Reduce the red wine with the shallots until the liquid has almost evaporated. Let cool thoroughly. Then whisk in the butter until smooth. Stir in the lemon juice, salt, pepper, and chervil. Perfect with beef steaks.
