Ingredients for 4 servings:
- 2 kg asparagus, green
- 4 onions, finely chopped
- 300 g bacon, streaky
- 6 tbsp clarified butter
- Parmesan, freshly sliced
- Lettuce, the leaves
- Tomato(s) (cocktail tomatoes)
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel the asparagus if necessary and trim the ends. Cut the bacon into thin strips. Heat the clarified butter in a large roasting pan. Fry the bacon strips. Add the onion and sauté until translucent. Place the asparagus spears on top of the bacon-wrapped onions. Cover the roasting pan and roast for 8-10 minutes, depending on the thickness of the spears. Turn occasionally to ensure all the spears cook evenly. Serve the asparagus and coat with the bacon-wrapped onions. Grate fresh Parmesan cheese over the asparagus. Garnish with lettuce leaves and halved tomatoes.
