Butter Prawns – Prawns in butter sauce

Ingredients for 2 servings:

  • 250 g shrimp(s) with shell
  • 3 tbsp butter
  • 1 handful of curry leaves
  • ½ green chili pepper(s) or 1 green bird’s eye chili
  • 1 garlic clove(s)
  • 1 tsp sugar
  • ½ tsp salt
  • some white pepper
  • 4 egg yolks
  • 4 tbsp butter
  • ½ tbsp oil
  • ½ tsp salt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 32 minutes

To make the egg threads, whisk the egg yolks together and melt the butter and oil in a pan. Slowly whisk the eggs into the hot butter mixture, stirring vigorously, quickly, and continuously. Continue heating and stirring until the threads are lightly browned. Add a little salt and place the cooked threads in a sieve, squeeze out any excess water, and allow to drain. Pat the prawns thoroughly dry, fry until pink, and remove from the pan. Melt the butter in a pan and briefly fry the garlic, chili, and curry leaves. Then add the prawns, sugar, salt, and pepper; mix well and continue frying briefly. Before serving, either mix with the egg threads or simply scatter the egg threads on top.
