Ingredients for 4 servings:

  • 500 g white cabbage (Jaroma cabbage)
  • 1 cup water
  • 1 tbsp clarified butter
  • 1 tsp caraway seeds
  • 1 pinch(s) of white pepper, freshly ground
  • 100 g ham, raw
  • 4 eggs
  • 200 g flour
  • 250 ml beer, light
  • salt and pepper
  • 2 tbsp chives, cut into rolls
  • Clarified butter for frying

Working time approx. 30 minutes; Total time approx. 30 minutes

Jaroma Kohltaler (stomach-friendly cabbage)

Clean the Jaroma cabbage, quarter it, and remove the stalk. Finely shred and chop the cabbage. Heat water and clarified butter, add the shredded cabbage, and season with caraway and pepper. Cover and sauté over medium heat until tender. Drain and let cool. Meanwhile, cut the ham into small cubes. Beat the eggs. Sift the flour into a bowl. Add the salt, eggs, beer, diced ham, and chives and mix. Let the batter rest for 30 minutes. Fold the shredded cabbage into the batter. Heat the clarified butter. Fry approximately 8-10 cabbage patties in batches. Serve as a side dish with roasts.
