Ingredients for 4 servings:
- 350 g minced meat
- 3 red bell peppers
- 1 can/n tomatoes
- 1 tbsp oil (olive oil)
- 1 large onion(s)
- 200 g rice
- salt and pepper
- 750 ml meat broth
- curry
- Paprika powder, sweet
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Brown the minced meat in olive oil until crumbly. Add the chopped bell peppers and diced onion and sauté. Quarter the tomatoes and add them. Wash the rice thoroughly and add it as well. Simmer everything for about 5 minutes. Pour in the water and add 3 level teaspoons of meat broth. Add salt, pepper, 1 teaspoon of curry powder, and 1 teaspoon of sweet paprika. Cook over low heat for 20 minutes. The meat broth will have largely evaporated by this time. Stir occasionally during cooking. Season with cayenne pepper if desired. Also delicious cold as a rice salad.
