Ingredients for 10 servings:

  • 4 fish(s) (fatty herring)
  • 3 onions, red
  • 2 carrots
  • 30 grains of allspice
  • 30 grains of white pepper
  • 4 bay leaves
  • 300 ml vinegar
  • 300 ml sugar
  • 600 ml water

Finnish style

Soak the herring overnight in cold water or in a liquid that is half water and half milk. The liquid can be changed during the marinade. Prepare the marinade: Bring the ingredients to a boil and let it cool to room temperature. Remove the entrails and loose belly skin from the herring, for example with household scissors. Rinse the herring thoroughly and pat dry with kitchen paper. Then cut into pieces about 2 cm wide. Slice the onions and carrots. Alternate layers of herring pieces, onion slices, carrot slices and spices in a jar, pour the marinade over them. Close the jar and let it marinate in the refrigerator for at least two days. If kept cool, the herring will keep for two weeks, but it is at its best after 4-5 days. Tip: With the glass master herring, you can try different spices: horseradish shavings, mustard seeds, cloves, celery strips. You can also fillet the herring and skin it. In this case, it does not need to be soaked. Preparation time 30 min. Marinating time 2 – 3 days
