Matjes fillet in red wine sauce

Ingredients for 4 servings:

  • 8 fish fillets (matjes fillet)
  • 2 large onions, red
  • ¼ liter wine, red, dry
  • ⅛ liter vinegar (white wine vinegar)
  • 200 g sugar
  • 4 peppercorns
  • 1 stalk(s) cinnamon
  • 3 cloves

Instructions

Working time approx. 40 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 40 minutes

Rinse the herring fillets in cold water, place them in ½ liter of water, and soak for 12 hours. Then halve the herring fillets lengthwise and crosswise and arrange them in a stoneware pot. Peel the onions and slice them into thin rings. Bring the red wine to a boil with the vinegar, onion rings, sugar, peppercorns, cinnamon stick, and cloves. Reduce heat to low and let stand for 5 minutes, then let cool. Pour the cooled marinade over the herring fillets. Cover and let marinate in the refrigerator for 3 days.
