Vegan baked apple jam

Ingredients for 1 servings:

  • 1 ½ kg apples
  • 1 orange(s), the juice
  • 500 g gelling sugar 2:1
  • Cinnamon powder
  • 1 packet of vanilla sugar
  • 1 vanilla pod(s) or vanilla powder
  • possibly almond flakes

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Makes approx. 6 glasses of approx. 250 ml each

Cut about half of the apples into small pieces and puree the other half (it doesn’t have to be perfect). Gently bring all the apples to a boil in a saucepan, perhaps with a splash of water, until the apples have a consistency similar to apple compote. Then juice the orange and add it to the apples with plenty of cinnamon powder, vanilla sugar, and vanilla (I use a vanilla grinder). After seasoning, let the mixture cool. When it’s not too hot anymore, add the gelling sugar and make the jam according to the package instructions. Pour the hot jam into jars and screw on the lids tightly. I get about 6 jars, all a little smaller than 250 ml. If you like, you can sprinkle flaked almonds on the finished jam before sealing the jars for the perfect baked apple feel.
