Wintery pumpkin, grapefruit and ginger jam

Ingredients for 1 servings:

  • 500 g grapefruit(s), red
  • 600 g pumpkin flesh
  • 5 cm ginger, approx. 15 g
  • 600 g gelling sugar 2:1
  • 1 ½ tsp, heaped speculatius spice

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 20 minutes

Peel and dice the pumpkin, cover, and cook in a little water until very soft. Depending on the type of pumpkin, this can take between 5 and 15 minutes. Drain the cooking water. Segment and chop the grapefruit, and add it to the pumpkin cubes. Blend everything finely. Peel and finely grate the ginger, and add it. Add the speculatius spice and simmer for 5 minutes. Add gelling sugar as needed and simmer for another 4 minutes. Pour the finished jam into clean jars.
