Ingredients for 4 servings:
- 250 g pasta (e.g. fusilli)
- salt water
- 500 g chicken breast fillet(s)
- 2 bell peppers, red
- 4 carrots
- 3 garlic cloves
- 400 ml coconut milk
- 3 spring onions
- 60 g peanuts, unsalted
- 2 tbsp curry paste, yellow
- 2 tsp sambal oelek
- salt and pepper
- curry powder

Cook the noodles in salted water. Meanwhile, dice the meat and vegetables. Sear the meat with the garlic, spring onions, and peanuts until crispy, then remove from the pan. Briefly fry the noodles in the pan and set aside. Then fry the vegetables, add the meat back, and cook for 2-3 minutes. Add the noodles, deglaze with the coconut milk, season, and simmer for 10 minutes. Tip: The meat can be marinated beforehand with the peanuts, 2 tablespoons of oil, the spring onions, sambal oelek, and garlic.
