Tapioca in coconut

Ingredients for 4 servings:

  • 100 g tapioca, large
  • 500 ml coconut drink
  • 200 ml water
  • 2 tbsp agave syrup
  • 2 tbsp desiccated coconut
  • 1 pinch of salt

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 35 minutes

simple but exotic

Combine water, salt, and coconut milk. Bring about 300 ml to a boil. You can also mix coconut milk with water, but in this case, use 200 ml coconut milk and 500 ml water. When the liquid is boiling, add the tapioca. Reduce the heat and simmer gently. Add a little more liquid at a time and continue simmering for about 45 minutes. Add the agave syrup and desiccated coconut. Serve warm or cold. The dessert tastes even better if you let it sit overnight.
