Vanilla pudding oatmeal with hot cherries

Ingredients for 1 servings:

  • 40 g oat flakes, fine
  • 200 ml water
  • 1 pinch of sea salt
  • 5 g sugar
  • 200 ml soy milk (soy drink), unsweetened
  • 20 g vanilla pudding powder
  • 20 g protein powder with vanilla flavor, vegan
  • 175 g morello cherries from the jar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Toast the oats over medium heat for about 2 minutes, then add the water, salt, and sugar and bring to a boil. Reduce heat to medium and simmer for about 3 minutes. Then let it swell for another 5 minutes on the turned off stovetop. Don’t be surprised if there’s still a lot of liquid in the pot at first. After the swell process, the porridge will be super creamy and will have absorbed the excess water. Meanwhile, dissolve the vanilla pudding powder in 50 ml of the soy milk. Stir this mixture into the oatmeal and bring to a boil briefly while stirring again so that the pudding powder can thicken. Finally, gradually stir in the remaining 150 ml of soy milk and bring the pudding oats to a boil one last time. Finally, stir in the protein powder. Remove from the heat, pour into a bowl, and top with the warmed cherries and a little cherry juice.
