Ingredients for 4 servings:
- 800 g pork loin(s)
- 12 slice(s) bacon, thinly sliced
- 350 g risotto rice
- 2 large beefsteak tomatoes
- 1 onion(s), red
- 2 cloves garlic
- 1 large zucchini
- 2 carrots
- Herbs of Provence
- pepper
- Salt
- 8 shashlik skewers
- 200 ml white wine
- 100 g Parmesan, grated

Prepare the rice according to the package instructions. In the meantime, cut the pork loin into 12 equal slices and wrap each piece with a slice of bacon. Then carefully thread 3 pieces of the wrapped loin onto each shish kebab skewer. Sear the prepared skewers in hot olive oil on both sides and finish cooking in the oven if desired. Meanwhile, dice the vegetables and sauté them in another pan, depending on their cooking time, then deglaze with wine. Stir the vegetables into the cooked rice and season to taste with grated Parmesan cheese, salt, pepper, and herbs. Plate the finished risotto and serve with the skewers.
