Turkey schnitzel with pineapple

Ingredients for 4 servings:

  • 4 turkey schnitzels, approx. 150 g each
  • Salt
  • Cayenne pepper
  • 2 eggs
  • 2 tbsp flour
  • 6 tbsp breadcrumbs
  • 4 tbsp oil
  • 1 can pineapple, sliced ​​(446 ml)
  • 1 bottle of chili sauce (180 ml)
  • Fat, for the shape
  • 100 g whipped cream
  • 100 g cheese, Edam (piece)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Preheat the oven to 200°C / fan oven: 175°C. Gas mark 3. Wash the meat and pat dry. Season with salt and cayenne pepper. Beat the eggs. Coat the schnitzels one after the other in the flour, egg, and breadcrumbs. Tap off any excess oil. Fry in hot oil for 3 minutes on each side. Remove from the oven and drain on kitchen paper. Drain the pineapple. Layer the meat in a greased baking dish. Mix the chili sauce and cream and spread over the top. Coarsely grate the cheese and spread over the top. Bake the schnitzels in the oven for approx. 15 minutes until golden brown. Serve with baguette or toast.
