Heidi's stuffed zucchini

Ingredients for 2 servings:

  • 1 large zucchini
  • 300 g minced meat
  • 150 g smoked meat
  • 2 small onions
  • 1 egg(s)
  • 30 g cheese (Gouda), grated
  • ½ bunch parsley
  • Salt
  • pepper
  • 8 tbsp tomato ketchup
  • 8 tbsp cream
  • 1 dashes Tabasco
  • butter
  • oil

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 10 minutes

Wash the zucchini, halve lengthwise, and cook in boiling salted water for about 3 minutes. Remove from the water and carefully scoop out the flesh with a small spoon. For the filling, fry the finely chopped onions and diced smoked meat in a little oil. Add the minced meat and fry until crumbly. Place the minced meat mixture in a bowl with the egg, parsley, and cheese, season with salt and pepper, and mix well. Fill the zucchini halves with the mixture. Grease a large ovenproof dish with a little butter or oil and place the stuffed zucchini halves in it. Mix together the tomato ketchup and cream, season with Tabasco, and pour over the stuffed zucchini. Place a few knobs of butter on the zucchini and bake in a preheated oven at 200°C for about 20 minutes. Serve with mashed potatoes and a green salad. Tip: If you like a lot of sauce, use a little more ketchup and cream. If the ketchup-cream mixture is too heavy for you, you can use milk instead of cream (partially or completely) and strained tomatoes instead of ketchup.
