Chicken strips on vegetable rice

Ingredients for 2 servings:

  • 120 g rice
  • 2 chicken schnitzels
  • 3 tomatoes
  • 2 bell peppers
  • 1 handful of mushrooms
  • 1 zucchini
  • ½ cucumber(s)
  • 5 basil leaves
  • 2 onions
  • salt and pepper
  • Paprika powder
  • marjoram

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Cook rice in salted water, drain. Clean the vegetables. Peel the zucchini and cucumber, blanch the tomatoes, remove the skin and seeds, and cut into small cubes. Clean and finely chop the mushrooms. Sauté the onion, add the remaining vegetables, and roast. Season with chopped basil, salt, paprika, marjoram, and pepper, and stir in the rice. Keep warm. Cut the meat into strips and grill in the pan. Season with salt, marjoram, pepper, and paprika. Place on top of the rice to serve. Tip: Add soy sauce for a finishing touch.
