Ingredients for 1 servings:

  • 120 g turkey schnitzel
  • 2 tomatoes
  • 2 shallots
  • 1 clove(s) garlic
  • 200 g mushrooms
  • 1 bell pepper(s), green
  • 120 g rice (wild rice mix), cooked
  • Soy sauce
  • Salt
  • pepper
  • ½ tsp parsley

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the turkey cutlets into thin strips and fry in a nonstick pan without fat. Score the tomatoes crosswise, blanch them in hot water, peel, halve, and deseed. Dice the tomato flesh, shallots, and garlic clove. Slice the mushrooms and strip the bell peppers. Add the vegetables to the turkey cutlets and sauté for about 5 minutes. Add the wild rice mixture and season generously with soy sauce, salt, and pepper. Sprinkle with parsley and serve. This meal is worth 5 points per serving.
