Turkey stew with onion, celery and apple

Ingredients for 2 servings:

  • 200 g turkey breast
  • 1 tbsp rapeseed oil
  • 1 tbsp butter or margarine
  • 200 g onion(s), peeled
  • 300 ml chicken stock
  • 200 g cream
  • 1 tsp mustard, medium hot
  • 200 g celery, cleaned
  • 150 g apples, peeled, pitted
  • Salt and pepper from the mill
  • 2 tbsp, heaped parsley, freshly chopped
  • 1 tsp flour

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Cut the turkey breast into small cubes and sear in a pan with a little oil. Set aside. Cut the onion, celery, and apple into approximately 5-8 mm cubes. Heat the butter or margarine in a saucepan and fry the onions until golden brown. Dust with flour and deglaze with the stock and cream. Add the celery and mustard. Let everything simmer gently for about 15 minutes. Mix in the apple cubes and turkey and cook for 2 minutes. Season to taste with salt and pepper, add the parsley, stir, and serve.
