Ingredients for 4 servings:
- 3 chicken breast fillets
- 500 ml chicken broth
- 6 slice(s) bacon, streaky
- 3 eggs, hard-boiled
- 2 tbsp parsley, chopped
- 1 pepper, red
- 1 avocado(s)
- 400 g lettuce
- 50 g arugula
- 4 tbsp red wine vinegar
- 4 tbsp mayonnaise
- 8 tbsp olive oil
- salt and pepper
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Bring the chicken broth to a boil and cook the chicken breasts in it. Let it cool and then cut into cubes. Cut the bacon into strips and fry until crispy. Peel and finely chop the eggs and mix with the parsley. Halve, deseed, and dice the peppers and avocado. Cut the lettuce into strips. Spread the arugula leaves on a platter and arrange all the ingredients on top. For the sauce, mix the red wine vinegar, mayonnaise, and olive oil well and season with salt and pepper. Serve with the salad.
