Fruity turkey curry with pineapple and mango

Ingredients for 3 servings:

  • 400 g turkey meat
  • 2 spring onions
  • 1 can bamboo shoot(s), approx. 175 g
  • 3 slice(s) pineapple from the can
  • 1 class can/n mango(s), approx. 250 g
  • 1 can coconut milk, approx. 400 g
  • salt and pepper
  • Oil for frying
  • 2 tsp curry powder
  • 2 tsp curry paste, mild

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cut the meat into bite-sized pieces. Slice the spring onions into rings. Heat the oil in a large pan and brown the meat. Add the spring onions. Season with salt, pepper, curry powder, and curry paste. Add the coconut milk. Drain the bamboo shoots, pineapple, and mango and add to the meat. Simmer on low heat for 5 minutes, adjusting the seasoning if necessary. Serve with basmati rice.
